Texans love southern comfort food but former state senator Wendy Davis made it okay to make pasta in Texas. Here is her recipe for "Patti Pasta"
1-2 Tbsp olive oil
4 garlic cloves, peeled, chopped
2 28oz cans whole, peeled San Marzano tomatoes
2 Tbsp red pepper flakes
1 lb. penne rigate pasta
1/3 cup heavy cream
2 Tbsp vodka
Shredded Parmesan cheese
DIRECTIONS:
1. Saute the garlic in the olive oil over medium heat until it releases its aroma.
2. Add the tomatoes, a small amount of their juice and the red pepper flakes to the garlic and simmer over low heat for 20 to 30 minutes. (break apart the tomatoes with a wooden spoon as they soften and break down)
3. Boil the pasta according to the package direction until al dente. Drain and combine pasta and sauce mixture. Cook for 1 minute and add heavy cream.
4. Cook for another minute and add vodka. Cook for 30 more seconds...top with cheese and serve with orange sherbet.
